Lemon Chicken With Potato & Asparagus.


Sorry for the delay... this is what I made Wednesday night. I found the idea online... but I didn't have fresh lemons, and it was too late to head to the store so I improvised with Lemon Pepper seasoning from Mrs. Dash. I also grated a little orange peel for the extra citrusy taste. I added other random seasonings and some olive oil to the chicken (boneless & skinless), potatoes & asparagus then cooked for about 45 minutes on 350 degrees.

My husband said it was really good... and he loved the lemon flavor. I do believe he liked it and was not just saying that because if I make something and he is not a fan, he simply says, "It's not my favorite". What a gentleman... hehe. We had some leftover chicken so I cut it up and made Marcos a chicken salad for lunch the next day.

Next time I will make sure to cut up fresh lemon and let them cook in the food. If you think you might like this one, have at it! Pretty cheap a meal at that. Have a wonderful day.

  1. Your husband is not a very nuteral critic.. May I suggest a fat guy who loves food. I know such a man..LOL. Looks great
