Grilled Chicken Raspberry Salad



One word for what I have been on updating my blog: SLACKER! I have been cooking, but I have not been updating...

So last night Marcos & I wanted something light for dinner, so I picked out some fresh stuff to make a yummy salad. Let me just say that growing up, the only thing I knew of salad was ice burg lettuce with ranch and croutons. I am proud to say that I am venturing out in this area ;)

This salad was easy & yummy... I used romaine lettuce with raspberries, feta cheese, sliced almonds, grilled chicken breast and topped it with the most amazing dressing I've ever tasted. (Thanks to my dear friend Kelly Nordstrom who introduced us ;) It is a poppyseed dressing and it is just amazing... especially with salads that have fruit on them! YUM!

This is the Poppyseed dressing I'm talking about... It's like $2.99 at Super Target... It does not contain peaches, it just says it is delicious on fresh peaches =)

BBQ Beef Skewers with Veggies.




Last week was Marcos' spring break so we weren't home to cook very much. We spent four days in Arizona visiting my brother and watching Dodger spring training games, and then spent a couple of days in San Diego visiting friends.

We did, however, manage to cook one night. It was beautiful weather and the perfect day to barbeque. I can't take credit for this meal because my hubby cooked it. It was so yummy! He barbecued beef skewers with different colored bell peppers, red onion, mushroom, and tomato. We also had some brown rice and macaroni salad that Marcos' mom made. The perfect spring time meal! We are going to try this again soon, but next time with chicken :)
